At Los Álamos four varieties of red grapes are grown: Cabernet Sauvignon, Malbec, Merlot and Syrah, and two of white grapes: Chardonnay and Pinot de La Loire.  All are hand harvested, respecting the right moment for each of the varieties to produce the best wines.  

Waiting for the ripening of the tannins is fundamental for the varieties destined to produce wine in oak barrels.  But, to achieve the necessary acidity in the elaboration of some white wines the grapes must be harvested before they reach their maximum maturity.  And to produce dessert wines a late ripening must be awaited.
